BBQ Master

We were up in Okoboji for the 4th of July this year, so I decided to make Jeremy's family some true Texas brisket! I've been watching my dad make this special dry rub recipe for years and I thought that this might be the chance to try it on my own. The only warning I got from my dad was to be sure to have water on hand....

Here I am prepping the brisket with all the tasty spices...
This is about 3 minutes into the process. I am supposed to sear the meat for 30 minutes before slow cooking it. Notice the color of the smoke here.
Okay, time to open it... WHOA! Maybe this is cooking a little fast.
Yep, have singed arm hair to prove it!
Umm, I've never seen smoke this color before... might time to check it again - what will be singed this time?!
Yep, total fire ball!
Marianne is on dousing patrol and trying to help me keep the flame low! I think we need more of a douse here!
Luckily, Marianne is still smiling at this step!
Three hours later we did have a tasty meal... thought I'm pretty sure this is the last time I'll be "cooking" for Jeremy's parents with out the fire department on stand-by!
